Pumpkin is a major SUPER FOOD! One of the easiest and most affordable ways to incorporate pumpkin into your diet is to buy some 100% canned pumpkin or pumpkin puree. It is loaded with the powerful antioxidant called carotenoids, as well as Vitamin E, C, A, K, magnesium, potassium and iron. It even serves up 3 g. of protein per cup. I love adding pumpkin to smoothies or mix it in with some plain yogurt or oatmeal for the quick and easy or into soups, muffins or pies.
Here is a great seasonal smoothie recipe using 100% pure pumpkin:
•1 Banana, frozen
•A pinch of nutmeg, cinnamon, allspice, clove or any of your favorite fall flavors
•Blend with ½ c of ice and 6 oz. of water for a low calorie, super powerful breakfast or dessert
•Optional: Add 2 tbsp. of ground flax-seed meal for added omega 3’s, essential fatty acids and fiber and/or 1 tbsp of all natural peanut butter for added protein
