With the harvest moon this past weekend and fall making its wonderful debut, I felt it was time to break down the vegetable garden. I had some tomato plants still producing with several dozen green tomatoes on them, but I decided to close out the small garden once and for all. I have an oldie, but a goodie recipe that I came up with a while back: Beer Battered Fried Green Tomatoes.
- 8 – 10 large green tomatoes
- 3 c. panko style bread crumbs
- 2 c. whole wheat flour
- 2 eggs
- 6 oz. of your favorite beer
- 4-5 tbsp olive oil
- 2 tbsp garlic salt
1.) Slice green tomatoes about a 1/2 inch thick, removing and tossing ends, set aside.
2.) Blend flour, panko bread crumbs and garlic salt, set aside.
3.) In a separate bowl, whisk together the beer and eggs.
4.) You will likely fry two batches of tomatoes if using a large saute pan. Heat 2-3 tbsp of olive oil, lightly covering the bottom of the pan on medium heat.
5.) To start first round, dip tomatoes in beer/egg batter then coat with the panko flour mixture, add to medium-hot saute pan. Turn gently when golden brown on bottom. Repeat on opposite side.
6). Once all of your green tomatoes are gently fried, set aside.
It is not required that you serve a sauce with this delicious treat, but if you decide to do so, here is a quick homemade sauce that contrasted nicely:
- 2 tbsp mayonnaise
- 2 tbsp BBQ sauce
- 2 tbsp of honey
- 1 tbsp spicy mustard
- Mix and spoon small amount over each tomato.
