Shrimp Fajita Salad


Here’s a simple salad recipe that will offer a healthy dose of Iron, Fiber, Vitamin A and C, Protein, Calcium & many more nutrients as well as great taste: Shrimp Fajita Salad!

Serves 6, Layer:

  • 6 c. chopped romaine
  • 2 c. cooked brown rice
  • 2 c. sautéed onions and peppers, blended
  • 1 1b. shrimp, sautéed in garlic & olive oil
  • 1 whole tomatoes, diced
  • 1 c. shredded cheddar
  • 1/2 c. sour cream or Greek yogurt
  • 1/2 c. fresh cilantro, chopped
  • 1 lime, sliced
  • 1 c. salsa
Substitute: Black beans, grilled chicken or flank steak for shrimp
Additional Options: Green onions, black olives, corn
