Pumpkin seeds, pumpkin seeds……


Did you know that pumpkins are native to North, South and Central America? It is no surprise they are celebrated the way they are during the fall months. Take advantage of the wonderful nutrients pumpkins have to offer; particularly their seeds. They are packed with Zinc, Manganese, Magnesium, Phosphorus, Copper, Iron, protein, a trace amount of vitamin E and more. Pumpkin seeds also have antioxidants and antimicrobial properties; both anti-fungal and anti-viral making them a beneficial snack for cold and flu season. I love to bake them just before they burn to maximize the crunch. My favorite seasonings for pumpkin seeds are basil, sea salt, onion, garlic and olive oil. You could also go the sweet route and season with honey, cinnamon, brown sugar, nutmeg, clove, allspice, etc. What is your favorite way to season them?
