Spring Dance Pasta


Some of the most deliciously fresh meals are the ones that are completely improvised. This tends to be me style regularly and is why I say most of the work occurs at the grocery store so you readily have inexpensive ingredients awaiting your creation. Last night’s dinner was this yummy pasta dish: Spring Dance Pasta. How’s that for a name?

Ingredients: 
1. 100% whole wheat linguine
2. 2 tbsp. extra virgin olive oil
3. 2 tbsp. lemon extract
4. 1 c. chopped fire roasted red peppers (I buy in bulk for 3.99 and get several uses)
5. 1 can of whole black olives, sliced
6. 2 c. chopped green onion
7. 1/4 c. Parmesan
8. 1 lemon (zest & juice)
9. 1/4 c. white wine
10. 2 tbsp. chopped garlic
Begin by boiling water and cooking pasta. Set aside. In a large skillet, heat olive oil, lemon extract, garlic. Add green onion, sliced black olives, fire roasted red peppers, lemon zest and white wine until warm. Top over cooked pasta and drizzle with additional olive oil, Parmesan and fresh lemon juice. Easy Peasy!
