Meatless Monday: Bruschetta Salad Melt


MEATLESS MONDAY: Bruschetta Salad Melt w/ chopped broccoli, tomatoes, roasted red peppers, onions, garlic, basil and olive oil all smothered with part skim mozzarella and melted on multi whole grain batard (French bread) with flax-seeds. Bake at 350 for 20 minutes, then broil for one minute. Love a cheesy, veggie sandwich melt for dinner! NOTE: Saute all veggies except tomatoes in garlic and olive oil before stuffing & baking.
