Oatmeal Raisin Pumpkin Peanut Butter Cookies (flour-less & egg-less)


Check out these little love nuggets ♥. They are flour-less Oatmeal-Raisin-Pumpkin-Peanut-Butter-Cookies! So good. They are egg-less too, so my son and I happily tasted the batter! Only five minutes to prep and seven minutes to bake. Makes 2 dozen small cookie rounds.

  • 2 c. oatmeal
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 2 tbsp brown sugar
  • 3 tbsp 100% pumpkin puree
  • 2 tbsp natural peanut butter
  • 2 tbsp skim milk
  • 1/2 c. raisins
  • 1 tbsp olive oil (yes, olive oil)

Mix all of the dry ingredients (first five) then add the next five ingredients. Bake at 375 for eight minutes. Immediately after baking, flatten the top with a fork like you do with peanut butter cookies. Amazing flavor, HEALTHY and nutrient dense!
