Meatless Monday: Veggie Stir-Fry


MEATLESS MONDAY: A super simple Vegetable Stir-Fry. Take advantage of the already colorful, already cut and ready to use frozen vegetable blends that are picked at peak ripeness and have maximum nutrients. One of my favorites is the stir-fry blend of peppers, onions, snow peas, carrots, red peppers, broccoli, water chestnuts and more. It is also a good idea to add any other fresh produce you may have to bulk it up. Steam some rice and saute your veggies in this homemade stir fry sauce to eliminate all of the chemicals and junk found in the powdered packets and bottles:

  • 1/2 c. orange juice
  • 1 tbsp brown sugar
  • 3 tbsp soy sauce
  • 1 tbsp garlic powder
  • 1/2 tsp yellow curry
  • 2 tsp turmeric
  • 1 tbsp ginger
  • 1 tbsp of sesame oil
  • 2 tbsp honey
Blend all ingredients together with a whisk, then add to vegetables and stir fry over medium high heat until warmed through, but careful to retain the vibrant colors. Top the cooked, stir fried vegetables over steamed rice. A very low cost meal when you regularly keep these seasonings in stock. Enjoy!
