Super Sassy Salsa!

This salsa is full of flavor and spice so serve it anytime you want to heat things up! Spread it over fish, pork or chicken. Try using it as a dip with your favorite tortilla chips or on top of a salad. Impress your friends by adding it to wraps or fish tacos as a substitute for Pico de Gallo.  Healthy Indulgence is a great way to describe this sultry salsa. You won’t be disappointed and you certainly don’t have to wait for summertime. This is an anytime favorite. If you can’t find mango’s in season, substitute pineapple.

Ingredients:

  • 1 jalapeno, sliced and diced (seeds removed unless you want some serious heat)
  • 1/2 c. chopped green onion
  • 1 mango (peeled, sliced and diced)
  • 2 small tomatoes, diced
  • 4 slices of fresh squeezed lime (or 1/2 lime)
  • 1 c. fresh chopped cilantro, stems removed
  • 2 tbsp. lemon juice

Optional: Add black beans and a whole grain wrap to make this an easy COMPLETE meal. Maybe a favorite lime beverage on the side. As usual…Enjoy!
