Build Your Own Salad Night!

Dinner Tonight is Build Your Own Salad. The picture shown was from one of our build a salad nights over the summer with marinated grilled chicken, our fresh garden vegetables and more. Build Your Own Salad night is a great way to use up any produce that is on its way out. Plus check those cupboards for canned beans, beets and olives; frozen vegetables work too.Tonight our build a salad will have:

  • romaine
  • hard boiled eggs
  • olives
  • kidney beans
  • shredded cheese
  • beets
  • carrots
  • sliced raw onion
  • sweet peppers
  • cucumbers
  • anything else I can find

The kids love it and it is a great way to get everyone, young and old, eating more vegetables. I have the kids wash their hands really well, give them a pasta bowl with shredded romaine and let them hand scoop their own toppings and choose from a variety of salad dressings. It is a huge success in our home. To complete the meal, I also add some oven toasted whole grain bread drizzled with olive oil, garlic, oregano and any other dried herbs or seasonings.  This will give warmth and a welcome crunch to the salad entree.
