European Seafood Salad

This is our version of a European Seafood Salad that we have been making annually each New Year that pairs perfectly with champagne and other fun appetizers. I love it because it is light, healthy, seasonably unique and is incredibly flavorful. It makes a wonderful dish to bring to a party or to have all to yourself. Here is what we add:


  • 4 lbs. of crab. NOTE: We use imitation crab because it is soft, has a nice flavor and is easy to shred. You could also use baby shrimp, lump crab, shredded white fish or any of your favorite seafood as long as it is cut up or shredded.
  • One small stalk of celery, chopped
  • 2 bundles of green onion, chopped
  • 4 c. sliced black olives
  • 2 c. of sliced green Spanish olives with pimentos
  • One head of romaine lettuce, shredded super thin
  • 2 lemons, juiced
  • 3/4 c. mayonnaise (go very light)
  • 1 tsp. garlic powder
  • A dash of salt & pepper


Once you have all of your ingredients cut up and ready to use, all you do is blend everything together in a large bowl, including the romaine lettuce. The key to this salad is chopping and slicing everything very thin and letting it sit for at least a few hours. It is best served cold and with crunchy whole grain party crackers. I like Milton’s brand crackers with black sesame and flax seeds and they are large enough to hold the salad. The olives are an amazing accompaniment and the flavor is festive.
