Opening Act Lettuce Wraps w/ Black Beans, Quinoa, Apple & Pear

Oh yeah! Lettuce wraps are the bomb. A few months ago I posted the Rock Star Lettuce Wraps, so it only seems fitting to have the opening act as well. They are just way too easy and oh my goodness they are so good with crazy texture and flavor. Truly delightful in your mouthful. You can pretty much look around your house and gather similar ingredients to pull these little green boats together. So give it a try. The spices are the key ingredients. I like ginger, garlic, a smidgen of turmeric and Chinese Five spice which is a pre-blend of anise, star anise, Chinese cinnamon, fennel and Sichuan pepper.  Here is what I did:

Ingredients: Makes about 10-12 stuffed wraps

  • One head of fresh crisp romaine leaves or lettuce
  • 2 c. of black beans or black re-fried beans
  • 2 c. of cooked steamed quinoa or brown rice
  • 1 tbsp. of extra virgin olive oil or toasted sesame oil
  • 1 apple, diced
  • 1 pear, diced
  • 1 sweet onion, diced
  • 1 tsp. of Chinese five spice, ginger, garlic powder and turmeric
  • 1/2 c. of non fat Greek yogurt or sour-cream
  • 1 tbsp. paprika for garnish

Instructions:

  • Wash and separate leaves without cutting, set aside ready to fill
  • Have quinoa or brown rice steamed and ready for filling
  • In olive oil or toasted sesame oil saute apple, pear and sweet onion until soft
  • Add in all dried spices spices to fruit and onion mixture, mix well
  • In the crispy romaine leaves, layer: black beans, quinoa, fruit and onion blend, top with a dollop of Greek yogurt, sprinkle with paprika for more color.
  • Serve and enjoy!
