The avocado fruit is full of greatness. They are rich in potassium, even more so than bananas, contain vitamin E and vitamin K, high in both soluble and insoluble fiber, a wonderful source of monounsaturated fats known to reduce heart disease and stroke, provide anti-inflammatory effects within the body and promote brain health.
Here is an easy to prepare dish that is full of flavor and would be fabulous as a dip, with chilled jumbo shrimp or blackened fish tacos. This recipe uses avocados along with fresh juicy tomatoes, fresh lemon juice, lemon zest, garlic and a pinch of salt. It is simply elegant and refreshing.
Recipe as follows. Serves 8.
- 3 avocados, peeled, sliced and diced
- 2 large ripe tomatoes, diced
- 1 whole lemon, juice and zest
- 1 tsp salt
- 2 tbsp granulated garlic
Blend avocado, tomatoes, salt and garlic, Cover with fresh squeezed lemon juice and top each serving with grated lemon zest. Pure joy! So light and refreshing.
