Sweet Wine & Citrus Chicken with Cranberry Infused Quinoa


This is a flavorful twist utilizing lean chicken breast, sweet wine, fresh fruit and quinoa. Quinoa, an ancient seed, is well known for being gluten free, a complete protein, anti-inflammatory, and a great source for antioxidants and phytochemicals. Quinoa is also high in nutrients such as phosphorus, folate, manganese and riboflavin which helps improve energy metabolism.

The zesty wine and citrus juices absorbed into the chicken, blended with the sweet tartness of the cranberry infused quinoa is a nice balance of flavor. The chicken is extremely tender after being baked in the lemon juice and wine sauce. If you have a few minutes in the morning, this would taste even better if you have time to let it marinade first.


– 1 lb. of boneless, skinless chicken breast (3 oz pieces)
– 1 lemon, lime, orange or grapefruit (select at least two whole fruits)
– 1 tbsp. lemon zest
– 1/3 cup of lemon juice
– 2/3 cup of sweet Chilean Moscato wine
– 1 tbsp. dill
– 2 tbsp. granulated garlic
– 1 tsp black pepper
– 2 cups quinoa, cooked (following directions on package)
– 1 cup dried cranberries
– 2 tbsp extra virgin olive oil


In a baking dish, lay out 3 oz pieces of chicken breast. Pour lemon juice and white sweet wine over top. Slice citrus fruit and scatter over chicken. Sprinkle with dill, black pepper and garlic or any of your favorite dried spices. Bake chicken at 350 degrees for 30 minutes or until done. Before serving, slice each piece of chicken into thin strips, but remaining together. Refer to picture above.

While the chicken is baking, prepare the quinoa. When you add the water to boil the quinoa, also add in the dried cranberries to cook with it and to infuse the sweet flavor. When it is done, toss with extra virgin olive oil.

On a serving plate, layer quinoa with infused cranberries, topped with the sliced citrus chicken and the tender, baked sliced fruit. Add some remaining wine sauce from the baking dish over top as well. Under 400 calories for this meal with one piece of chicken and one cup of cooked quinoa with cranberries. Use the remainder of your wine, to have with this meal. Enjoy!
